12 Days of Cookies and Cocktails
Day 1

S'MORES COOKIE BARS
For those of you who do not know what a s'more is, it is a popular campfire treat consisting of marshmallow and chocolate sandwiched between graham crackers. This cookie here, gives off the same amazing taste, but is much less messy and easier to eat on the go. They are best when eaten warm. Just zap them in the microwave for 10-12 seconds and voila! I can't even tell you how sensational they are, you have to try it yourself!


Ingredients:
  • 1/2 cup butter, room temp.
  • 1/4 cup brown sugar
  • 1/2 cup sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 1/3 cups all purpose flour
  • 3/4 cup graham cracker crumbs
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 2 king size milk chocolate bars (Hershey's, etc.)
  • 1 1/2 cups marshmallow creme/fluff

Directions (makes 16 cookie bars):
  1. Preheat oven to 350 degrees F. Grease an 8" square baking pan.
  2. In a large bowl cream together butter and sugar. Beat in the egg and vanilla. In a small bowl, whisk together flour, graham cracker crumbs, baking powder and salt. Add this to the butter mixture. If using a machine, mix on slow until the two are combined. This makes up the dough.
  3. Split the dough up in half. Press half of the dough into an even layer on the bottom of the pan. Place a single layer of chocolate bars over the dough. Spread fluff on top of the chocolate, holding it together. Place the remainder of the dough into an even layer on top of the fluff (easiest if you flatten the dough into small pieces and lay them together).
  4. Bake for 30-35 minutes or until lightly browned. Cool completely before cutting into the bars.

GRINCH COCKTAIL
This green colored cocktail has none of the "bah humbug" components of Dr.Seuss's infamous holiday character, but instead is mixed with some of the sweetest flavors! Add a cherry on top to add a little extra nice-ness for the poor little man!


Ingredients:
  • 2 oz midori
  • 1/2 oz lemon juice
  • 1 tsp simple syrup
  • maraschino cherry
Directions (makes 1 drink):
  1. Pour the ingredients into a cocktail shaker with ice.
  2. Shake well
  3. Strain into chilled cocktail glass
  4. Garnish with maraschino cherry on top!
